Buckwheat Banana Bread

1 ¾ cups Nunweiler’s Buckwheat Flour

⅓ cup maple syrup

2 heaping teaspoons cinnamon

2 heaping teaspoons baking powder

pinch of mineral salt

4 large, very ripe bananas, mashed

⅓ cup coconut oil (in liquid form)

2 teaspoons vanilla extract

Mix all together and pour into a greased loaf pan. Bake at 375 for 45 minutes. Cool & enjoy!
