Debbie’s Vegan Coconut Muffins

INGREDIENTS

3/4 cup mashed ripe banana⁠

3/4 cup almond milk⁠

1 teaspoon apple cider vinegar⁠

1/4 cup pure maple syrup⁠

1 teaspoon pure vanilla extract⁠

1/4 cup coconut oil, melted⁠

2 cups Nunweiler’s Spelt Flour⁠

6 tablespoons coconut sugar⁠

2 teaspoons baking powder⁠

1 1/2 teaspoons cinnamon⁠

1/2 teaspoon baking soda⁠

1/2 cup (50 g) walnut halves, chopped (optional)⁠

1/4 cup of unsweetened coconut⁠

⁠DIRECTIONS

Mix together all the ingredients until well blended. Drop into muffin tin and bake at 350 for 20 minutes or until cooked through. Cool & Enjoy!
