Ingredients
- 2 large, very ripe banana
- 1/3 cup extra virgin olive oil
- 1/2 cup honey
- 1/2 cup Nunweiler’s Thick Rolled Oats
- 1 3/4 cup Nunweiler’s Whole Grain Spelt Flour
- 2 eggs
- 1/4 cup milk of your choice
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp vanilla extract
- pinch of salt
- Add 1/2 cup of dark chocolate chips if desired
Preheat oven to 320F. In a bowl combine honey and oil with a whisk. Add eggs, milk and mashed bananas until combined. Add all remaining ingredients. Pour batter into a parchment paper-lined loaf pan. Top with extra oats. Bake for 1 hour, let rest for 15 minutes and enjoy!
