Yolanda’s Healthy Lemon Loaf

Ingredients:

1 cup Nunweiler’s Flour All Purpose Flour⁠
1/2 cup Nunweiler’s Flour Oat Flour⁠
1 tsp baking powder⁠
1 tsp baking soda⁠
1/2 tsp fine kosher salt⁠
1 tsp vanilla extract⁠
1 cup plain Greek yogurt⁠
2 large eggs⁠
2 tsp lemon zest⁠
1/2 cup maple syrup or honey⁠
1/4 cup coconut oil⁠

Directions:

Preheat the oven to 350ºF and line a loaf pan with parchment paper. Spray with a bit of cooking oil spray. In a medium bowl, combine the first 5 ingredients. In a second bowl, whisk the remaining 6 ingredients. Pour the wet ingredients over the dry ones, and whisk to incorporate. Transfer the batter to the prepared loaf pan and bake at 350ºF for 40-50 minutes, or until a toothpick comes out clean.⁠
